This hearty vegan salad is packed with protein and essential vitamins, and it’s full of flavour too!
Thanks to a generous helping of quinoa it’s filling enough for a lunch or evening meal. Enjoy it with
your favourite crusty bread.
1 cup uncooked quinoa 1/2 cup diced celery 2 green onions, sliced 2 diced apples 1/3 cup toasted pecans, chopped 1/3 cup sultanas
1 tablespoons apple cider vinegar 1 tablespoon honey or maple syrup 1 tablespoon olive oil 2 teaspoons dijon mustard 1/4 teaspoon granulated garlic Kosher salt and fresh ground black pepper to taste
1. Cook the quinoa according to the package instructions adding a little salt to the water.
2. Once the quinoa is cooked let it cool to room temperature.While the quinoa cools add all of the vinaigrette ingredients to a small bowl and whisk.
3. Once the quinoa has cooled pour it into a serving bowl along with the remaining salad ingredients. Season with salt and pepper. Pour the vinaigrette over the salad and stir everything together until combined.
Serve as a side or with a bread of your choice
