Easy to whip up in just 15 minutes, this popular Indian dish is suitable for vegans – though it tastes
so good, everyone will be asking for seconds! Okra is delicious sautéed and healthy too: it’s packed with vitamin C, folic acid and potassium. This entrée goes especially well with flatbreads like roti or paratha.
500g Fresh okra 1 Onion thinly sliced 1/2 tsp Red chilli powder 1 tsp Ground cumin powder 2 tsp Amchoor powder (dried mango powder) 1 tsp Salt 2 tbsp Cooking oil
1. Wash and dry the okra. Cut the top and bottom off. Make a vertical slit on each okra, taking care not to split them in half.
2. Add some oil to a pan and heat, Add the onions and saute on medium heat until golden brown, should take around 5 minutes. Now add the salt, cumin, chilli, and amchoor powder to the onion and mix well.
3. Fill the stuffing in the okra slit carefully making sure not to split them in half. Once all the okras are stuffed, add oil in a pan over medium heat.
4. Add the stuffed okra in the pan and cook on medium heat with the lid on for about 10 minutes stirring very gently a couple of times.
Serve hot, with Roti, Nan or Steamed Rice.
