SHALGAM CURRY (Vegan Turnip Curry)



Serves 4


INGREDIENTS


800g Turnips diced 2 tbs cooking oil 1/2 cup of water 2 onion thinly sliced 1 tsp garlic purée 1 tsp ginger (grated) 1 tsp cumin seeds 1 tsp chilli flakes or to taste 1 tsp salt or to taste 2 tbsp chopped coriander for garnish



INSTRUCTIONS

1. Heat oil in a medium size pan, then add the onion and sauté for 5-8 minutes until golden brown. Then add the turnips, ginger and garlic and fry for 5 minutes.

2. Then add the salt, chilli flakes and cumin seeds, cook for a further 4-5 minutes.

3. Then Add 1/2 cup of water and cook on low heat with the lid on for 15 mins or until the turnips are soft and cooked through. Add fresh coriander leaves and serve.

Serve with Rice, Roti or Nan.
