MANGO CHILLI SALAD (Vegan)

Easy to whip up in a few minutes, this vibrant salad features the distinctive sweetness of mango with a kick of chilli – while toasted peanuts give the dish a satisfying crunch. It’s the perfect refreshing salad for a sunny day, or for brightening a dreary one!




Serves 4


INGREDIENTS


2 large mangoes firm-ripe

1/2 cucumber halved and sliced

1 medium red onion finely sliced

1/2 cup cilantro chopped

1/2 cup roasted peanuts rough chopped (optional)

2 tbs balsamic vinegar

1 to 2 tbs chilli olive oil

salt to taste




INSTRUCTIONS

1. Peel and cut the mango into 2 inch X 1/4th inch sticks, cut cucumbers into 2 inch X 1/4th inch sticks and thinly slice onion

2. Add sliced mangoes, cucumber, onions, and peanuts to a medium bowl. Stir in 2 tablespoons balsamic vinegar and 2 tablespoons of chilli olive oil and mix well. Garnish with a little cilantro and chopped peanuts.

Serve as a side or with a bread of your choice.
