This is an easy, packed full of flavour Pakistani Courgette Curry called Torai ki sabzi in Urdu. This is a very tasty vegan curry that'll transform everyday Courgettes into something you'll love to cook again and again. This dish is typically served with Roti, but you can pair it steamed Rice or any bread of your choice.
4 large courgettes, peeled and cut into 1/8-inch half-moons or quarters
4 tbsp oil
2 medium onions, thinly sliced
1.5 tsp garlic, crushed
1 inch piece ginger, crushed
1 tsp cumin seeds
2 medium tomatoes, finely diced
1 tsp salt or more to taste
1/2 tsp coriander powder
1/2 tsp turmeric powder
1 tsp red chilli powder or to taste
1 small fresh green chilli, sliced (optional)
2 tbsp coriander, chopped for garnish
1/2 cup water
INSTRUCTIONS 1. Heat oil in a pan over high heat. Add the sliced onions, and sauté until they are lightly golden, about 8-10 minutes.
2. Lower the heat to medium and add the garlic, ginger and cumin seeds. Sauté until the raw smell of the ginger and garlic disappears, about 20-30 seconds.
3. Add the tomato, salt, coriander powder, and red chilli powder, turmeric powder and fresh green chilli if using. Sauté for a minute, then stir in the courgettes and 1/2 cup of water. Mix well, ensuring that the courgettes are well coated.
4. Lower the heat on the lowest setting, cover and cook for 15-20 minutes, stirring occasionally in between. Once most of the water has evaporated. Uncover and stir well. Taste and adjust salt.
Garnish with coriander, and serve.
Serve with Roti, Nan or Rice.
