STRAWBERRY & SPINACH SALAD (Vegan option)
This summer berry salad may taste decadent, but it’s loaded with healthy nutrients and antioxidants.
Its diverse flavours and textures are a delight for the tastebuds; mild spinach, creamy avocado and
cottage cheese contrast perfectly with tangy blueberries. Add extra crunch with a sprinkle of
almonds.

Serves 4
INGREDIENTS
for the SALAD

6 cups fresh baby spinach 2 cups strawberries, sliced 1 cup of blueberries 1 avocado, peeled, diced 2 tablespoons of cottage cheese (for Vegan option omit) 1/4 cup sliced almonds, toasted half a small red onion, thinly sliced
for the DRESSING
1/3 cup avocado or olive oil 2 Tablespoons balsamic vinegar 1 tablespoon honey (for Vegan option use maple syrup) pinch of ground dry mustard (optional) fine sea salt and freshly-cracked black pepper
INSTRUCTIONS
1. Toss all ingredients of the salad together.
2. Whisk all the ingredients of the dressing together until combined. Add a pinch of salt and pepper.
3. Drizzle over the dressing over the salad and enjoy.
Serve with bread of your choice.
