This fuss-free soup is easy to make and it’s packed with nutritious veg and tender chicken.
Comforting and healthy with a spicy kick, it’s perfect for cold winter evenings. Spicy chicken soup is delicious with warm, crusty bread, and goes particularly well with garlic bread.
2 tbs oil 1kg chicken, slice thinly 1 onion, finely diced 4 cloves of garlic, minced 1 fresh chilli, finely sliced Salt to taste 1 tsp chilli powder 1 tsp garam masala 3 spring onion, chopped 1 turnip, thinly sliced 1 red pepper, thinly sliced 1 aubergine, diced 2 Tomatoes, finely chopped 400ml Coconut milk Coriander for garnish
1. Add oil to pan, when hot add onions and saute for 5 minutes, then add the garlic and fresh chilli, and saute for 1 minute.
2. Add the chicken and stir fry for 10 minutes.
3. Add salt, chilli powder, garam masala, spring onion, turnips, red peppers, aubergine, tomatoes, coriander and cook for 10 minutes.
4. Add coconut milk and cook for a further 5-10 minutes.
Serve with Garlic Bread, or a bread of your choice.
