SOOJI KA HALWA (Semolina Pudding - Vegan option)

This easy dessert can be whipped up in just a few minutes – a perfect crowd-pleaser if you have

unexpected guests! It’s easy to make a vegan version too; simply swap the butter for coconut oil and use water instead of milk. If you don’t have almonds, try adding dried or fresh fruit.



For Vegan option, use coconut oil and water instead of milk.


INGREDIENTS

1/2 cup semolina 1/3 of salted butter 1¼ cups water or (milk) optional 1/2 cup sugar 2 tbsp flaked almonds


INSTRUCTIONS

1. Heat butter in a pan and add semolina. Cook, while constantly stirring on a medium heat till semolina imparts a pleasant roasted aroma and becomes golden brown in colour.

2. Add the sugar and water, stirring on a high heat till all the water has been absorbed and semolina, starts leaving some butter on the sides of the pan. Remove from heat and stir in the flaked almonds.

Serve hot, on its own or with Parathas.
