MOOLI KI SABZI (Vegan Radish Curry)
One of the easiest curries you can make, this tasty vegan dish can be whipped up in just a few
minutes. What’s more, it’s super-healthy, thanks to a good helping of nutritious veg. Enjoy the crisp
flavour of stir-fried radish and zesty spices with rice, nan or paratha.

Serves 2
INGREDIENTS

600g Mooli/ Radish, peeled and cut into 1/2 inch thick roundels 1 cup sprouts, halved 1 cup packed baby spinach 2-3 tbsp Oil 1 tsp cumin Seeds
1/2 tsp nigella seeds 1 tsp garlic, finely chopped 1 tsp ginger, finely chopped 2-3 dry red chilli (optional) 1/2 cup tomato puree 1 tsp coriander powder 1/2 tsp turmeric powder 1 tsp kashmiri red chilli powder 1/4 cup of water, add a little more if needed Salt to taste 1 tbsp fresh coriander, chopped for garnish
INSTRUCTIONS
1. Heat the oil in a pan, once the oil is hot, add onion and saute for 5 minutes until golden brown. Add the radish and sprouts and stir fry for 2 minutes.
2. Add the cumin seeds, nigella seeds, garlic, ginger, coriander powder, turmeric powder and red chilli powder. Fry for 3 minutes and then add then add the tomato puree and cook for 2 minutes.
3. Now add salt, and 1-2 tbsp of water. Cover the pan and cook until mooli is softened on low heat. Add spinach and sauté for 1 minute. Garnish with fresh coriander and serve hot.
Serve with Rice, Nan, Paratha or Roti.
