GOBI KI SABZI (Vegan Cauliflower Curry)

Serves 2-3


1 medium/large cauliflower 2 tablespoons oil 1 teaspoon cumin seed 1 onion, chopped 1⁄2 teaspoon ginger paste 1⁄2 teaspoon garlic paste 1-2 teaspoon chilli powder 1/2 teaspoon turmeric powder 2 tomatoes pureed 1 teaspoon salt 1 teaspoon garam masala 1 teaspoon coriander powder 2 tbsp coriander, chopped, for garnish


1. Heat oil on medium heat in a large pan and add the cumin seeds and fry for 30 seconds. Add the chopped onions and saute until translucent.

2. Add the ginger and garlic paste and fry until lightly golden. Add the chilli and turmeric powder and fry for a minute.

3. Add the cauliflower, salt, and pureed tomatoes and mix well. Cover and cook on low heat until the cauliflower is tender.

4. Add the chopped coriander leaves and the garam masala and mix well. Serve with rice, roti or nan.
