1/2 cup each of 4 different vegetables of your choice - I have used, courgette sliced, broccoli small florets, baby corn, sugar snaps. 1 small onion diced 1 small tomato chopped 3/4 cup creamed coconut Salt to taste 2 tsp oil 1 tsp cumin seeds 1 green fresh chilli - optional or 1tsp powdered red chilli 1/2 tsp turmeric powder 1/2 tsp garlic paste 1/2 tsp ginger paste


1. Heat 2 teaspoon oil in a pan, add cumin seeds, turmeric powder, slit green chilli and dried red chilies. Then add onions and saute until they become translucent now add garlic & ginger paste and saute for 1 min.

2. Now add the creamed coconut and mix in well, so that you have a thick sauce, add a little water if needed.

3. Now add and the tomato and vegetables and saute on medium heat for 5 mins until vegetables are tender add a little water if needed.

Serve with Steamed Rice or Nan.
