COURGETTE DAL (Vegan Courgette & Moong Dal Curry)

A very simple and healthy courgette dal which is delicious and is very quick and easy to make. Paired with Steamed Rice or Roti and it's a match made in heaven!



Serves 4-6



INGREDIENTS


For the DAL


2 Cups Moong dal

4 Cups of water

1 Tsp chilli powder

1 Tsp salt or to taste

1/2 Tsp turmeric powder


For the CURRY


2 Onion, finely chopped

2 Courgettes, peeled and cubed/sliced

2 Tomatoes, chopped or pureed

3 Tbsp oil

1 Tbsp Ginger paste

1 Tbs Garlic paste

1/2 Tsp Red chilli powder

1Tsp Coriander powder

Coriander leaves (optional for garnishing)


For the TEMPERING


1 Tbsp oil

½ Tsp Mustard seeds (optional)

1 Tsp Cumin seeds



INSTRUCTIONS


1. Rinse the moong dal. Add to the pan with 4 cups of water, chilli powder, turmeric powder, salt and cook on a medium heat till the dal is soft.


2. Heat the oil in a pan and add the onions, and fry them till they turn translucent. Now add the garlic and ginger paste and fry for 30 seconds.


3. Now add the tomatoes, and saute for 2-3 minutes. Add the coriander powder, chilli powder and stir fry for 30 seconds. Add the cubed courgettes and saute on a medium heat till the courgettes are nearly cooked, this should take around 18-10 minutes.


4. Now add the boiled moong dal and more salt if needed and mix well. Simmer for 5 minutes.


5. Heat oil in a pan and add mustard seeds, cumin seeds and fry for about 30 seconds, then add to the courgette dal curry. Garnish with coriander leaves and serve.
