CHICKEN, MUSHROOM, TURMERIC BAKE
4 boneless skinless chicken breast
3 tablespoons butter
1 cup sliced fresh mushrooms
1/2 cup water
1/4 teaspoon salt or to taste
1 teaspoon chilli powder
1 teaspoon cumin powder
1/2 teaspoon turmeric powder
1 tablespoons wholegrain mustard
2 tablespoons creme fraiche
1/2 cup grated mozzarella or cheddar cheese
2 tbsp grated mozzarella or grated cheese to sprinkle on top
1. With a sharp knife make slit marks on the chicken breast pieces and add them to an oven proof dish.
2. Add the creme fraiche, water, salt, chilli powder, cumin powder, turmeric powder and wholegrain mustard to a bowl and whisk together
3. Add the sliced mushrooms and the cheese to the mixture and mix well.
4. Pour over the chicken breast and place in a hot oven 210c for 20 minuets. Sprinkle with a little more grated cheese and bake for a further 5 minutes until it's golden and crispy.
Serve with a side of your choice.
