CHICKEN FRY MASALA
Full of flavour and easy to prepare, this fiery dry-style curry is hugely popular in Southern India. It
features succulent chicken coated in delicious fried spices, and is perfect as an appetiser or a side
dish. Enjoy with rice or warm nan.

Serves 4
INGREDIENTS

1 kg of chicken breast 1 fresh lime, juiced 1 tsp salt 1/2 tsp ground black pepper ½ tsp turmeric 1 tsp red chilli 1 cup sliced onion 1 tsp minced garlic 1 tsp minced ginger 1 tomato pureed 1 tsp ground coriander 1 tsp garam masala 1 fresh green chilli 2 tbsp fresh coriander
INSTRUCTIONS
1. In a bowl mix the chicken pieces with lime juice, salt, turmeric, and red chilli. Cover and set aside in the fridge for 20 minutes.
2. Add Drizzle cooking oil in a large pan Sauté sliced onions until golden brown, remove from the pan and set aside.
3. Add minced garlic and ginger along with the chicken mixture stir fry for 10 minutes on high heat. Add the pureed tomatoes, ground coriander, and garam masala.
4. Stir fry for another 5 minutes on high heat and cook for 15 minutes on low heat with the lid on. Add fried onions, fresh green chilies and chopped cilantro cook for another 10 minutes on low heat with the lid on.
Serve with Rice, Roti or Nan.
