2 celery sticks chopped 1 cup radishes chopped 8 oz (250g) fresh mozzarella, diced 2 tablespoons red pesto 1/2 small onion, finely diced 1 teaspoon fresh grated garlic 1/4 cup olive oil Salt and fresh cracked black pepper, to taste 2 ripe avocados peeled, seeded and chopped 1/2 cup basil leaves finely chopped 2 tablespoons balsamic vinegar A drizzle of chilli oil
1. Combine celery, radishes, avocado, mozzarella, onion, garlic, basil, salt, and pepper in a bowl. Top with pesto and olive oil and mix well to evenly coat in the dressing.
2. Drizzle with the balsamic vinegar, and adjust seasoning with salt and pepper, if needed.
Serve with a bread of your choice.
