1 cup cherry tomatoes, halved 8 oz (250g) fresh mozzarella, diced 2 tablespoons basil pesto 1/2 small onion, minced 1 teaspoon fresh grated garlic 1/4 cup olive oil Salt and fresh cracked black pepper, to taste 2 ripe avocados peeled, seeded and chopped 1/2 cup fresh basil leaves, chopped 2 tablespoons balsamic vinegar
1. Combine tomatoes, avocado, mozzarella, onion, garlic, basil, salt, and pepper in a bowl. Top with pesto and olive oil and mix well to evenly coat in the dressing.
2. Drizzle with the balsamic vinegar, and adjust seasoning with salt and pepper, if needed.
Serve with a bread of your choice.
