APPLE & WALNUT SALAD (Vegan option)

This nutritious salad is packed with nuts, fruit and green leafy veg. It’s a treat for the tastebuds: the

sweet and tangy flavours of crisp apples and vinegar dressing perfectly complement the savoury

flavours of spinach and cheddar. Make it vegan by swapping cheddar for vegan cheese or extra

walnuts.




Serves 4


INGREDIENTS


for the DRESSING

1/4 cup extra virgin olive oil 1/4 cup champagne vinegar (or apple cider vinegar) 2 tablespoons lemon juice 1 teaspoon wholegrain mustard 1 garlic clove, peeled and minced a generous pinch of salt and black pepper (optional) 1 tablespoon honey or maple syrup, to sweeten

for the SALAD

4 cups baby spinach 2 stalks celery, chopped ¼ cup red onion, thinly sliced ¼ cup raisins 1/4 cup pomegranate seeds ½ cup toasted walnuts roughly chopped 2 apples, cored and thinly sliced ⅓ cup grated cheddar


INSTRUCTIONS

1. To make the dressing: place all the dressing ingredients in a bowl and whisk. Set aside.

2. To make the salad: Place spinach, celery, red onion, raisins, walnuts, pomegranate seeds, grated cheese and sliced apple in a large salad bowl. Drizzle it with the dressing and give it a gentle toss.

Serve with Cheese bread or bread of your choice.
