Featuring mild, creamy spinach, the tart crunch of apple and the texture of the walnuts, this moreish salad can be enjoyed as a main or a side dish, and it’s easy to whip up in just a few minutes. To make it vegan, simply omit the feta and swap honey for maple syrup.
for the SALAD
2 Apples, sliced
1/4 cup feta cheese (omit for vegan option)
1/4 cup walnuts
1/4 cup sultanans
2 cups of baby spinach
1 small red onion, thinly sliced
for the DRESSING
1/3 cup extra virgin olive oil 1/4 cup apple cider vinegar
2 tablespoons lemon juice 1 tablespoon Dijon mustard 1 garlic clove, peeled and minced a generous pinch of salt and black pepper 1 tablespoon honey or maple syrup for vegan option (optional)
1. Add all ingredients for the dressing in a small bowl and whisk to combine, and set aside.
2. Add spinach, apples, red onion, walnuts, sultanas, and the feta cheese to a large bowl. Drizzle with the dressing, and toss to combine.
Serve with a choice of bread.
