ALOO DAL (Vegan Potato & Moong Dal Curry)
Real comfort food! A very simple and healthy potato dal which is delicious and is very easy to make. Pair it with Steamed Rice or Roti and it's real winner for when you are craving a real good hearty meal.

Serves 4
INGREDIENTS

For the DAL
2 cups Moong dal
4 cups of water
1 tsp chilli powder
1 tsp salt or to taste
1/2 tsp turmeric powder
3-4 Potatoes (peeled and cubed)
For the CURRY
2 Onion (finely chopped)
2 Tomatoes (chopped or pureed)
3 Tbsp oil
1 Tbsp Ginger paste
1 Tbs Garlic paste
1/2 Tsp Red chilli powder
1Tsp Coriander powder
Coriander leaves (optional for garnishing)
For the TEMPERING
1 Tbsp oil
½ Tsp Mustard seeds (optional)
1 Tsp Cumin seeds
3 red dried chillies, sliced
INSTRUCTIONS
1. Rinse the moong dal. Add to the pan with 4 cups of water, chilli powder, turmeric powder, salt and the cubed potatoes cook on a medium heat till soft.
2. Heat the oil in a pan and add the onions, and fry them till they turn translucent. Now add the garlic and ginger paste and fry for 30 seconds.
3. Now add the tomatoes, and saute for 2-3 minutes. Add the coriander powder, chilli powder and stir fry for 30 seconds. Add the boiled moong dal and salt, and mix well. Simmer for 5-10 minutes.
4. Heat oil in a pan and add mustard seeds, cumin seeds and red dried chillies, fry for about 30 seconds and add to the Aloo dal curry. Garnish with coriander leaves and serve.
